Bread Machine: I want to bake the bread in the oven how do I know at what temp. and how long to bake for? I am new at using a bread machine and I love it for mixing the ingredients and doing the dough cycle. I don't like the shape of the bread though. So, what I like to do is after the dough cycle remove the dough and place it in a loaf pan, cover and let rise for about 30-45 minutes. Then, bake it in the oven. I have one recipe that tells me that I can bake at 350 degrees for 40 minutes if I don't want to bake the loaf in the bread machine but most recipes don't include this information. Is there a general rule about how long to bake a loaf of bread and at what temperature or any other way of figuring it out?

The recipe I used was from Zojirushi's because a manual didn't come with the machine. The crust was a kind of thick and the bread was very dense and heavy. Are there different types of pita bread? I went out to eat and ordered hummas and pita bread one day, and the pita bread did not look like the pita I am used to. What I can find in the grocery store of pita bread is a circle of bread that you can cut in half and fill the middle with food. This pita bread looked like a thick flat bread (about 3/4" thick) and it was circular, but it was really soft and had been lightly grilled on both sides. Does anyone know what kind of bread this was?

Why does the bread I bake come out grainy? Whether I use a bread machine or make the dough by hand and bake in an oven, my bread always comes out grainy and crumbly, and gets worse by the day. There's not AC in my house so the bread is sitting in its plastic bag in 100 degree heat most of the day. How do I know when my bread has risen all the way? This is my first time baking bread without my bread machine, and I'm confused as to when I know my bread is done rising. I used fast rise yeast, and it's been rising for about 15 minutes. Is there a specific size the bread gets so I can know when it's done rising? Thanks so much! :) My recipe didn't give any details on rising time, just "Let bread rise". Yes, it is the first rise.

Bread machine pizza dough - do I need to use bread flour? Or is all-purpose flour okay? We use our bread machine to make pizza dough. Will the dough be tougher if we use regular all-purpose flour instead of bread flour? Bread flour is supposed to be richer in gluten so it will stand up better to being machine-kneaded, but I don't know if it will matter since we are making pizza dough this time. Any experience? Any technical know-how affecting this?

What is the best artisan bread electric slicer? I'm thinking to bake about 50 loaves of artisan bread (hard outer crust, dried fruit inside) to give away. Since the bread gets hard very quickly, I'd like to slice it up and include a memo saying that after a few days it will be delicious when toasted. Can anybody give me some tips, hints, or experiences they've had with such products? Thanks.
What could I add to my bread recipe to make it more healthy? I make bread in this automatic bread maker I borrowed from my mom. It's really easy, you just pour all the ingredients in and it does the rest. Anway, I use the honey whole wheat recipe and modify it a bit. Here's what the recipe calls for: -10 oz water -1.5 tsp salt -1.5 Tb butter -1/3 cup honey -3 tsp vital wheat gluten -3 cups whole wheat flour -1.5 tsp active dry yeast Here's what I've added to it: -1/3 cup of rolled 5 grain whole wheats -1/4 cup sesame seeds Can you think of any other healthy ingredients I can add to my bread, that wouldn't ruin the taste? I really can't think of anything else besides some good oils like sesame seed oil or virgin olive oil, but I don't know if that would effect the bread rising and baking correctly.
