How do you bake your banana bread? I really like my Mom's recipe for banana bread, but the cooking time or temp seems to be off. 90% of the time when I bake one, the bottom is overcooked and the top is undercooked. Any ideas as to why my banana bread cracked and left a big hole in the middle? I made banana bread this morning. I used the recipe I have used for years with great success. I made 4 loaves. Two came out fine, the other two looked great when I took them out but completely caved in and left a huge hole where it cracked on top when it was done. I know I added all of the ingredients, didn't forget baking soda or anything. They taste great but do not look presentable. Does anyone know what I did wrong so I can fix it next time?

Banana bread mistake, how can I fix it? I made banana bread last night. The recipe called for 3/4 of a cup of brown sugar. I only put in 1/4 of a cup on accident. The bread tastes ok, just a little bland. What can I do (now that it's already baked) to give it a little sweetness? Maybe something to put on it?
