Why bread in my Zojirushi bread machine never raises?
I have BBCC-X20 machine. I bought a fresh yeast, both for normal and quick cycle. I follow the recipes from the Zojirushi book. But bread always comes out with it's top very low and curved inwards. I followed SumBuddy's recommendations. And bread came out of the oven very tasty and well rised. Last time I used the same recipe in the machine and bread was bad. Maybe Daa is right, it was too much moisture for Zojirushi machine baking. I will try this next.

- Are both kneading blades firmly seated on on the spindles? Are you measuring the ingredients exactly? Yeast bread does not tolerate experimentation. Are you using bread flour? The problem could be the heating element. One way to troubleshoot it would be to prepare the dough using the Quick Dough setting. Allow the dough to rest in the machine for one hour or until doubled in size. Punch it down, turn it out and shape into buns or a loaf shape and pan it up. Let rise another 45 minutes or until puffy. Bake at 375F for 11 minutes for rolls and 17 minutes for bread. If it bakes up okay in your oven, the problem is with the machine. I have the same machine but only use it for the kneading work. - Is the bread rising, but then caving in on top toward the end of the bake cycle? If so, this is usually the result of too much moisture - try using a bit less water.
