How can I make my home made bread more MOIST? I have a bread machine, but the bread seems to be too dry?
I recently got a bread machine and I have tried a couple of different recipes, the bread is too dry it think, specially the following day. I was wondering if anyone knew the trick to make them moist. Thanks.

- I would use the dough cycle on the bread machine, then take the dough out and bake it in your regular oven.
- Add shortening to the recipe. Shortening helps to make the bread more moist and airy. If you're health conscious, use vegetable shortening instead of animal shortening, but I find that the animal shortening works best.
- I cannot credit the following recipe to my Memmy Gold, but this is the recipe I found in my church cookbook. It's the one I use when I'm in the mood for homemade bread and want to do it the old-fashioned way! This recipe should yield approx. 4 loaves. HOMEMADE BREAD 2 c. milk / 6 t. sugar / 5 T. salt / 3/4 c. shortening / 2 c. warm water / 2 pkg. dry yeast / 12 c. flour Rise to double size. Bake at 350 for 30 minutes.
- Well, there are lots of tips for moist bread, try them n use the ones tht work for you! :) Turn the heat down and bake it longer. Use more liquid. Remember, although cooking is an art, baking is a science. Follow directions and measure properly. Make sure you're not overbaking. Using honey in place of all or some of the sugar in a recipe can help baked items remain moist. The main thing to know is that you probably don't need as much yeast as you think. And you definitely don't need as much flour as you'd imagine. As I recently discovered, if your dough sticks to your work surface you should use a scraper to get it off - do not add more flour. I'm guessing you added a bunch more flour because the dough seemed too sticky. But stil if you end up with dry bread...even the dryest bread is tasty toasted! And would make good breadcrumbs (blenderized or in a food processor) or, de-crusted, cut into rectangles and toasted a bit in a slow oven, croutons for stuffing. :) Happy baking !
- I always double the amount of oil or fat the recipe calls for. Its always moist and has a very good crust.
- I'e found in my bread machine that adding a bit more oil, or using shortening instead of oil works well. I use this standard recipe daily, and tweak it as necessary 1 cup of water 1 tablespoon sugar 1 big tablespoon of oil 1 1/2 teasppon of salt 3 1/2 cups of flour 2 teaspoons of yeast this is for the 1 1/2 lb loaf. I usually just make the dough then bake it in the oven, when i bake it in the bread maker I use shortening instead.
